Zucchini Bread

My Babchi’s Zucchini Bread is an all time favorite in my house.  A beloved recipe we just can’t get enough of during the summer months…. or any month !!

Ingredients

3 eggs                      1/4 tsp baking  powder                                                            1tsp. baking soda                                               

2 cups grated zucchini          2 TBS cinnamon

2 cups sugar                                1 tsp salt

1 cup oil                                      1 tsp vanilla

3 cups flour                 

1  cup chopped nuts   or                                            

chocolate chips  (optional)

                                                                                                                                                 

 

 You’re gonna like this…..so easy !

                                                                 

        

                 

 Beat eggs.
Add zucchini, sugar and oil –  blend well.   Add the                         
rest of the ingredients. Mix well. Makes 2 loaves.                                                 bake 325 1hr…check at 50 mins ovens may vary 
     
                     
Mmm.. yummy !

You will love the smell of this baking in the oven ! And if you have your own summer garden like we do you will have plenty of zucchini to work with. Maybe even a loaf to share with family or friends.

Best served warm out of the oven with a little (or a lot)

of cream cheese on it.

Even though this recipe makes two loaves, don’t expect it to last long…one slice becomes two, becomes three and before you know it you hear someone yelling….HEY, Who ate all the zucchini bread ???
